Squash Casserole

Squash Casserole (per request)

2 10oz bags of frozen yellow squash

1/2 cup chopped onion

3 cups cooked rice

1 can cream of chicken soup

1/2 cup mayonnaise

1/4 tsp pepper (or season to taste)

1/2 cup chopped green pepper (bell)

2 eggs beaten

1/2 cup milk

salt to taste (or 1tsp)

1 cup grated cheese (cheddar or your choice)

 

Cook squash until tender.  Drain and mix with onion, pepper and rice.  Mix eggs, soup, milk, mayonnaise and seasonings.  Add to squash.  Pour into a 2quart baking dish.  Sprinkle with cheese and bake and 350degrees for 30minutes.

this sounds good, De. Is it yellow squash you use? Are you going to make this for the Dallas crowd?
